Ingredients
2 English muffins or Bagels
4 Eggs
4 Strips of applewood or pepperjack bacon
2 Slices of cheddar cheese
Fresh Arugula, Spinach or Lettuce
1 Purple Onion
1 Avocado
Verde Hot Sauce
Pepper & Salt for taste

Step-by-Step Instructions
Start by preparing the bacon; over medium-low heat, start to crisp the bacon about 5-10 minutes total, once cooked, transfer to a plate with paper towel.
As the bacon is cooking, cut the bread and put it in the toaster, let it toast for 2-3 minutes, thinly slice purple onions, and avocados.
In the same bacon pan, add a sliver of butter and crack the eggs (cook the eggs the style you like them - I like fried eggs because the yolk is nice and runny, adding extra flavor), but add the cheese over the egg in the pan and cover. Let the cheese slightly melt before transferring it to the plate.
Once eggs, bacon, and toast are done, assemble the sandwich with all ingredients!
